I have an older lonestar classic head on its way to me so I need to pick up a 2X12 cabinet and was wondering how many ohms the cabinet needs to be. I've only ever had combos in the past so I'm not sure how the ohms work. Thanks.

The Lonestar manual does a good job of giving examples of correct and incorrect speaker/cabinet combinations. If you don't have a manual you can get one here:

What about wattage? If I get a 60 watt cab will I never be able to use the 100 watt setting?

You can use a 60 watt cab with a 100w head, there is a chance you'll blow it. It can be done if you keep the vol down. Like just in the bedroom. Of course if you plan to play in a band, it would be better to get speakers of a higher rating.
