How picky is a Mark V with its preamp tubes? Do I need a Mesa Mesa branded 12AX7 for the V1 slot or can I use any type of 12AX7?

You can put any 12ax7 in there. How it will sound and last will depend on the tube but it will work.

Ok thanks - do you know what would be a good replacement for a Mesa branded 12AX7? I know Mesa does not actually make their tubes but I cannot find any Mesa branded ones at the moment due to the tube shortage.

I've used Mesa, JJ's, Electro Harmonics, Mullards, all with good results.

Yeah JJs are readily available. Eurotubes does full re-tube kits and the power tubes are in the right bias range for Mesa amps:
