If removing / re-installing the tubes makes the problem go away for a while then it may just be a poor connection in the sockets. Sometimes the socket contacts can be spread open from repeated tube swaps. If the tube is red-plating, then its possible that the bias grid connection (pin 5) may be poor, allowing the tube to "run away" due to a lose of bias voltage.
Swap the tubes around and see if the problem follows the tube, or does the problem always happen in the same position? If it stays consistent in one socket then it may just be a poor connection.
Just watch the tubes and shut her down as soon as you see "red-plate". That is not a good situation for the amp to keep running in.
Also, you may want to see what the idle current (bias) is. Are these Mesa tubes? If not, they may just be too hot a tube.
This is where a bias probe is worth it's weight in gold.
