I have seen that some recommend using the el-34 setting rather than the 6V6/6L6 one. Really? Why?

I have it running with the 6V6 setting now. Do I risk letting the smoke out if I go over to the other bias setting? I am on Tweed power, tube rec, 1/2 power, and jacked into the 4-ohm setting with the combo speakers at 16 ohms. I can really open up the masters and it isn't threatening to kill me with the volume. Nice sparkle and still a fair amount of girth. Do I just flip the switch and see what happens?

Yes, that's a risk.
Those who recommend using the EL-34 setting...do they mean with 6L6 tubes still in place? No.
Most probably you have to swap the tubes for a matched set of EL-34 to flip the switch. And even then, it's recommended to still check the bias if your can.

If I'm remember correctly, EL-34 require less bias voltage than 6L6, thus you're risking of burning them.
